Domestic tandoors are smaller, portable, and wood/charcoal-fired, designed for home and backyard use only whereas commercial tandoors are much larger, stationary units, propane/gas-powered for high-volume restaurant use.
Yes, you can use both for great flavour. Lump charcoal is recommended for consistent high heat, while small pieces of seasoned wood with mustard oil can be added to impart a delicious smoky flavour.
No, never use your tandoor indoors, in a garage, or any enclosed space. It produces lethal carbon monoxide (CO) gas and must only be operated outdoors in a well-ventilated area away from walls or any closed spaces.
The high heat makes the tandoor self-cleaning, so never use water or cleaners on the interior clay. Once cool, simply brush out any ash from the bottom and wipe the stainless steel exterior with a damp cloth.
The most important rule is to keep the tandoor dry to protect the clay. Use a quality waterproof cover and store it in a sheltered location like a garage or covered patio once it has completely cooled down. Make sure you bring it out from the closed areas before firing it for use again.
