Choose the Manual for Your Tandoor Oven Model
Tandoor Morni publishes two official tandoor oven operation manuals covering all 16 oven models. Select the manual that matches your tandoor — the gas tandoor manual for natural gas or propane models, or the charcoal tandoor manual for charcoal and wood-fired models. Both manuals include the full Tandoor Oven Curing Paste (AS05) clay pot curing procedure, identical across all models.
Gas Tandoor Oven
Operation Manual
Natural gas & propane models. Certified gas technician installation required. Covers CSA gas certification and NSF/ANSI 4 sanitation standards.
Charcoal & Wood-Fired
Tandoor Oven Manual
Outdoor charcoal and wood-fired models. No gas connection required. Covers fire safety, charcoal sourcing, ash management, and troubleshooting.
Before Your First Use — What Every New Owner Must Know
Whether you have just purchased a gas tandoor oven or a charcoal model, there is one step that every new owner must complete before the first cooking session: curing the clay pot using Tandoor Oven Curing Paste AS05. This step is not optional. Operating an uncured tandoor will crack the clay lining and is not covered by warranty.
Apply AS05 Paste
Four coats with 10 minutes absorption each. Included free with every model. View Curing Paste →
Heat for 100 Hours
Start at 20% heat. Increase to 35% after 30 hours. No lid for first 40 hours.
Cool, Scrub & Cook
Cool fully, scrub with metal scrubber, wipe clean. The tandoor is now ready.
You can cook throughout the 100-hour curing process — no need to wait. Re-season every 4–6 months. Full instructions are in both tandoor oven operation manuals and in the Curing Quick Reference below.
Gas Tandoor or Charcoal Tandoor — Which Is Right for You?
If you are still deciding between a gas tandoor oven and a charcoal tandoor oven, these are the questions that matter most. Once you know your model, choose the correct tandoor oven operation manual from the cards above.

Key Differences Between the Two Manual Types
Both tandoor oven operation manuals share the clay pot curing process using Tandoor Oven Curing Paste AS05 — the only difference is the heat source used during the 100-hour curing period. The key differences between the two manuals are installation requirements, indoor vs outdoor use, and the gas-specific daily leak test procedure. For gas safety standards, see the NFPA 54 National Fuel Gas Code.

Clay Pot Curing Quick Reference — Tandoor Oven Curing Paste AS05
The Tandoor Oven Curing Paste AS05 process is identical across all gas, charcoal, and wood-fired tandoor models. The only difference is the heat source used during the 100-hour curing period. Tandoor Oven Curing Paste AS05 is supplied free with every new tandoor oven.
Decant Curing Paste AS05 into a clean bowl
If too thick, add a small amount of cooking oil. Target consistency: just thinner than toothpaste.
Apply to the entire interior clay surface
Use a clean cloth. Cover the belly, walls, and upper rim evenly. No dry patches.
Allow 10 minutes to absorb — repeat 4 times
Four coats total. Each coat deepens conditioning of the clay surface.
Heat for 100 hours at 20% → 35% maximum
Start at 20% heat. After 30 hours, increase to 35% max. Split into multiple sessions if needed. No lid for first 40 hours.
Cool, scrub with metal scrubber, wipe clean
Remove all remaining paste. Finish with a soft cloth.
Salt-water treatment (recommended)
1 litre water + 10 tbsp salt. Apply to hot clay walls — makes naan removal easier.
Curing at a Glance
Cooking during curing is fine. The tandoor can be used for cooking at any point during the 100-hour curing process. Skewers can be used to prepare tandoori dishes without waiting.
