From a Single Request
to North America's Most

In 1992, Mr. Bitu arrived in Toronto as a new immigrant, building a business importing Basmati rice and Indian spices. The path to tandoor ovens began with a single conversation — a restaurant owner asked if he could source one. He had never dealt in tandoors before, but he recognized what that request represented: an unmet need in a growing market.
That one oven led to many. As orders grew, Mr. Bitu saw that the North American commercial kitchen demanded more than the traditional charcoal-fired clay pot. Restaurants needed gas-compatible models that could be plumbed into an existing kitchen gas line. Health departments required food-safety certification — a field where no tandoor supplier had done the work. Kitchens demanded durability, consistent heat, and after-sales support that simply did not exist in the market at the time. Every competitor was importing and reselling. Himalayan Clay — Why It Matters
Trained potters hand-select clay from the foothills of the snow-fed Himalayas, sorting by hand for mineral density, texture, and heat tolerance. Himalayan clay has a naturally low shrinkage rate at extreme temperatures, high thermal mass for sustained heat retention, and a mineral composition that remains structurally stable through thousands of heat cycles. Generic clay cracks. Steel shells do not retain heat the same way. Neither produces authentic tandoori results.

At our Delhi factory, artisan potters trained specifically for tandoor construction shape each clay pot by hand. This is not general pottery — each artisan potter masters the specific wall thickness, interior diameter ratios, and base geometry required to achieve correct airflow and heat distribution. Each clay pot is kiln-fired at temperatures exceeding 1,000 degrees Celsius — hot enough to permanently alter the clay's molecular structure, increase its density, and eliminate any residual organic content.
