- 1 medium onion, cut up small
- 3 chopped garlic cloves
- 2 carrots, cut up and peeled
- 2 celery stalks, diced
- 6 cups chicken soup (low-sodium is best)
- 1 pound boneless, skinless chicken breasts or thighs
- 1 bowl of orzo
- Lemon zest
- Juice from 2 fresh lemons (modify to taste).

- 1/2 teaspoon of freshly ground black pepper.

Step 1: Start with the Base
