Step 1: Prepare the Chicken

To begin making classic tandoori chicken, rinse the chicken pieces thoroughly and pat them dry with a paper towel. Use a sharp knife to make 2–3 deep slits in each piece. These cuts allow the rich marinade to seep deep into the meat, creating that signature depth of flavor we all love in authentic classic tandoori chicken.

Step 2: Make the Marinade

In a large mixing bowl, prepare the vibrant marinade that gives classic tandoori chicken its bold personality. Combine thick yogurt, freshly squeezed lemon juice, ginger-garlic paste, a drizzle of oil, and a mix of traditional Indian spices—like turmeric, cumin, garam masala, and Kashmiri red chili powder.
