What is the method of preparing the authentic chilli naan?

Ingredients

For Dough as an Authentic Base:
  • 2 cups maida (refined flour)
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast. The alternative option is to use1¼ teaspoon active dry yeast.
  • ¼ cup plain yoghurt. Ensure keeping it at room temperature.
  • 2 tablespoons oil. The recommended options are sunflower or ghee.
  •  
For Chilli Topping::
  • 2–3 finely chopped green chillies. You can adjust to taste.
  • 1 tablespoon finely minced garlic
  • 2 tablespoons chopped fresh coriander
  • ½ teaspoon nigella seeds. Though this is optional, it is recommended to be traditional

The delicious recipe for preparing the chilli Naan in a tandoor is as follows:

Step 1: Activate yeast

If you are using the active dry yeast, ensure you mix the yeast with around 2 tbsp of the warm water and sugar. Ensure stirring it for 10 minutes until it becomes frothy.

Step 2: making the dough

Take a large bowl. Mix the flour and salt. Add yoghurt, oil, and yeast mixture. Or you can just add dry yeast directly if it is an instant yeast. Now, slowly add the warm water or the milk and keep on kneading to ensure it forms a soft and smooth dough that is not too sticky. Cover it with a damp cloth and let it rise for around 1 to 1.5 hours or until it doubles.

Step 3: prepare the topping mix

For this step, mix green chillies, garlic, coriander, and nigella seeds.

Step 4: Shaping and assembling

Punch down the dough and divide it into around 4 to 5 balls for cooking the naan on the tandoor from Tandoor Morni. Make sure to roll each into a teardrop or oval shape that is around ¼-inch thick. Now sprinkle and press the chilli garlic coriander mix onto one side of the naan using your rolling pin or fingers.

The optional step to be followed here is that you have to wet the underside of the leaf lightly with water if you are using a pan.

Step 5: Cooking the naan

Option A: Tandoor-Style on Iron Pan or Tava (Stovetop Version)

In this case, you will have to heat the cast iron skillet until it is very hot. Now place the naan chilli side up on the hot pan. Cook for around 1 to 2 minutes until you see the bubbles appearing at the bottom, getting golden spots. Now, just flip directly onto the open flame with the use of the tongs for charring. Now just brush with ghee or butter before you serve it.

Option B: Oven or Grill

You can just preheat the oven to the highest setting over the oven to the highest settings of around 250 to 270°C or 480 to 500°F, with a pizza stone or heavy tray. Now just place the naan directly on the hot tray for approximately 3 minutes or until you notice the puffiness and a slight charring.

The optional step to be followed here is to finish under the broiler/grill for around 30 seconds for the authentic tandoori char.
