Ingredients

For the Chicken:
  • 1.5 lbs boneless skinless chicken breasts or thighs, cut into chunks
  • ½ cup plain yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp ginger-garlic paste
  • 1 tsp smoked paprika
  • ½ tsp turmeric
  • ½ tsp cumin
  • 1 tsp garam masala
  • Salt to taste
For the Slow Cooker Filling:
  • 1 tbsp butter
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup milk (whole or 2%)
  • 2 tbsp all-purpose flour
  • 2 medium carrots, sliced
  • 1 cup frozen peas
  • 1 cup diced potatoes
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • Salt to taste
  • 1 tbsp chopped fresh parsley (optional)

For the Biscuit Topping (Chicken Pot Pie with Biscuits Style):

 

  • 1 can of refrigerated biscuit dough (or 6–8 homemade biscuits)
  • 1 egg yolk + 1 tbsp milk (for egg wash)

Instructions to be followed for making the Slow Cooker Chicken Pot Pie, in the step-by-step procedure

Step 1. First of all, you will have to marinate the chicken

  • Though it is optional, it is highly recommended. Take a large bowl, make sure to whisk together the yogurt, lemon juice, olive oil, ginger-garlic paste, and all the dry spices. Now just add the chicken chunks and toss them to cook evenly.
  • Now just let the chicken marinate for around 30 minutes or overnight in the fridge.  This step prevents dryness in the slow cooker later.

Step 2. Pre-Roast the Chicken in the Tandoor

  • You can just thread the marinated chicken onto lightly oiled skewers. Now, make sure to preheat the food truck tandoor oven with charcoal or wood for around 30 minutes until it reaches high heat. Step 3. Build the Base in the Slow Cooker

  • Take a saucepan, melt the butter over medium heat. Now saute the chopped onions for around 2 to 3 minutes until you see them turning translucent. You can simply add the minced garlic. Stir in the flour to create a roux, and now cook it for another minute. You can just go with slowly whisking in the chicken broth and milk until it is turning smooth and thick. Make sure to continue doing so for around 3 to 5 minutes, to get the city, creamy, and gravy base. Now simply transfer the mixture to the slow cooker.
