  • 3 garlic cloves, minced
  • 1 bell pepper (any color), chopped
  • 1 jalapeño, finely chopped (optional for heat)
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) white kidney beans or cannellini beans, drained
  • 1 can (15 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 2½ cups low-sodium chicken broth
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish

How to Make Healthy Chicken Chili Recipes – Step-by-Step

Step 1: Marinate and Roast the Chicken (Optional Tandoor Method)

  • Start by marinating your chicken in yogurt, lemon juice, paprika, turmeric, cumin, garlic, salt, and pepper. Let it rest for 30 minutes.
  • While the chicken marinates, fire up your CS03 Clay Tandoor and let it preheat for 30–40 minutes until it reaches a high internal temperature.
  • Thread the marinated chicken onto stainless steel skewers, then roast for 8–10 minutes, turning halfway through. The chicken should be slightly charred on the edges and cooked through.
  • Remove and let it rest. Then chop into bite-sized cubes

Tip: Don’t have a tandoor? Grill or bake the chicken for a smoky alternative.

Step 2: Sauté the Base

  • In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium heat.
  • Add diced onions and cook for 4–5 minutes, or until translucent. Add garlic and sauté for 1 minute.
  • Toss in bell peppers and jalapeños (if using), cooking until just tender.

Step 3: Build the Chili

  • Add tomato paste and stir until caramelized—this intensifies the umami flavor.
  • Pour in diced tomatoes, black beans, white beans, corn, and chicken broth. Stir to combine.
  • Season with chili powder, smoked paprika, ground cumin, salt, and pepper.
  • Bring to a boil, then reduce heat and let simmer uncovered for 20–25 minutes, allowing all flavors to meld.

Step 4: Add the Chicken

  • Add your chopped tandoor-roasted chicken (or grilled/boiled version) to the pot.
  • Simmer for another 5 minutes to allow the chicken to absorb the spicy chili base.
