For authentic results, we’ll use the CH06 Commercial Tandoori Oven, which delivers intense heat for perfectly puffed and slightly charred naan that stays soft on the inside.
Naan Gaddi & Naan Hook:
Use the naan gaddi cushion to gently stick the naan onto the tandoor wall and the naan hook to remove it cleanly once cooked.
Instructions – How to Make Soft Coriander Naan
- Step 1: Activate the Yeast
- In a small bowl, mix the instant yeast with warm water and sugar. Let it sit for 5–7 minutes until foamy. This ensures the yeast is alive and ready to work.
- Step 2: Make the Dough
- In a large mixing bowl, add flour, salt, baking powder, and baking soda. Mix well.
- Add the yogurt, oil, and activated yeast mixture. Begin kneading the dough using your hands or a dough hook.
- Add more water slowly if the dough feels dry. Knead for about 8–10 minutes until you get a smooth, soft dough. It should be slightly tacky but not sticky.
- Step 3: Let it Rise
- Cover the dough with a damp cloth and set it aside in a warm place for 1 to 1.5 hours, or until it doubles in size.
- This step is crucial for soft naan, as it allows the dough to ferment and become light and airy.
- Step 4: Divide and Shape
- Once risen, punch the dough to release air and divide it into 6–8 equal portions. Roll each portion into a ball and let them rest for 10 minutes.
- Dust your work surface lightly with flour and roll each dough ball into an oval or teardrop shape about ¼ inch thick.
- Step 5: Add Coriander and Press
- Sprinkle chopped fresh coriander and nigella seeds (if using) on one side of the rolled-out dough. Use the rolling pin to lightly press them into the dough so they stick well.
- You can also sprinkle minced garlic for a garlic coriander naan variation.
- Brush the plain side with a bit of water—this helps the naan adhere to the tandoor wall.
- Step 6: Cook in the Tandoor
- Preheat your CH06 tandoor oven for about 30–40 minutes until it reaches high heat.
- Using the naan gaddi cushion, carefully press the water-brushed side of the naan against the hot clay wall inside the tandoor. It should stick immediately.
- Cook for 1–2 minutes or until you see golden bubbles, puffing, and charring. Use the naan hook to remove the naan once it’s cooked.
- Repeat for all dough portions.
- Step 7: Cook in the Tandoor
- Brush each hot naan with melted ghee or butter immediately after removing it from the tandoor.
- Serve hot with your favorite curries, lentils, or enjoy as a wrap for grilled veggies or meats.
Pro Tips for the Softest Coriander Naan
- Use yogurt: It naturally softens the dough and helps fermentation.
- Knead well: Kneading activates gluten and gives elasticity to the naan.
- Let it rest properly: Don’t rush the rise—soft naan needs time.
- Use a tandoor or pizza stone: For home users, a pizza stone or cast iron skillet on high heat can mimic tandoor cooking.
- Brush immediately: Ghee or butter brushed on hot naan keeps it soft and adds flavor.
