To intensify the smoky flavor in your chipotle chicken recipe, toss a small wood chunk onto the hot coals of your CS01 Catering Clay Tandoor right before adding the skewers. The resulting smoke adds a deep, rustic edge that your guests won’t forget.

Instructions

 Step 1: Prepare the Marinade
In a large mixing bowl, combine the following:
  • 3 tablespoons of chipotle peppers in adobo sauce (blend them into a smooth paste)
  • 1 cup of thick Greek yogurt (for creaminess and to tenderize the meat)
  • 1 tablespoon garlic paste, 1 tablespoon lime juice, and 1 tablespoon olive oil
  • Add in your dry spices: 1 teaspoon smoked paprika, ½ teaspoon cumin powder, and ½ teaspoon dried oregano
  • Season with salt to taste

Mix everything together thoroughly until the marinade is smooth, rich, and packed with flavor. It should be thick enough to coat the chicken without dripping off.

Step 2: Marinate the Chicken

  • Cut 1.5 lbs (around 700g) of boneless chicken (thighs for juicier texture or breasts for a leaner version) into large chunks.
  • Add the chicken into the marinade and toss well until every piece is completely coated.
  • Cover the bowl with plastic wrap and refrigerate. Let it marinate for at least 1 hour, but for best results, marinate overnight. This allows the yogurt and lime to tenderize the meat while the spices penetrate deeply.
Step 3: Set Up the CS01 Catering Clay Tandoor
  • Fire up your CS01 Catering Clay Tandoor. It’s compact and ideal for food trucks, pop-ups, and outdoor events.
  • Load your tandoor with natural gas or propane (as per its configuration), or fire up charcoal/wood if that’s your preference. Allow it to preheat for 30–45 minutes until the clay walls are extremely hot and glowing.
  • The high retained heat in the CS01 ensures fast, even cooking and gives the chicken that signature tandoori char.

Step 4:Skewer and Cook the Chicken

  • Thread the marinated chicken chunks onto stainless steel skewers, leaving just a little space between each piece to ensure even heat exposure.
  • Carefully insert the skewers vertically into the hot tandoor, positioning them so the chicken is suspended over the live coals or flame source without touching the clay walls.
  • Roast for 15–20 minutes, rotating the skewers halfway through the cooking time.
  • Keep an eye on the surface of the chicken—it should develop beautiful blackened spots (char marks), and the juices should run clear when the thickest piece is pierced.
Step 5: Finish and Serve
  • Once the chicken is cooked through, remove the skewers from the tandoor carefully using heatproof gloves or tongs.
  • Let them rest for 2–3 minutes, then brush lightly with melted butter or a touch of olive oil for an extra layer of flavor and sheen.
  • Sprinkle freshly chopped cilantro over the chicken and serve immediately with lime wedges, naan, salad, or even rice bowls for catering setups.
