Tandoori chicken

To prepare tandoori chicken, start by washing the chicken pieces and making slits in them with a sharp knife, then pat them dry. For marinade, mix ginger garlic paste, salt, chili powder, Kashmiri chili powder, and lemon juice, and set aside for 1-2 hours. In a separate mixing bowl, toss in mustard oil, red chili powder, Kashmiri red chili powder, and tandoori masala, and let it rest for 20 minutes. Then, add thick yogurt and spiced oil with salt, and mix well before adding the chicken pieces. Massage the chicken with the marinade and let it rest in the refrigerator. Simple, right?

Preheat the tandoor oven to the highest temperature and place the chicken pieces on stainless steel skewers, cook for 20 minutes in the tandoor oven while flipping occasionally. And it’s all set to take out! Don’t forget to brush on some melted butter before serving. To complement this delicious tandoori chicken, you can also enjoy some freshly baked tandoori naans.

Tandoori chicken tacos with salsa

The name itself sounds delicious … doesn’t it? To make tandoori chicken tacos, first marinate the chicken with ginger, garlic, green chili paste, salt, black pepper powder, tandoori masala powder, red chili powder, lemon juice, and olive oil. Then, place the marinated chicken on tandoori skewers, heat the tandoori oven, and put the loaded skewers vertically in the tandoor. To avoid dry and rubbery tandoori chicken, manage the flame carefully if using a tandoor oven, or keep a close eye on the chicken if using a clay oven (since it heats up rapidly!) Don’t overcook it and make sure you remove it from the oven at just the right time to ensure it’s moist and juicy.

Next, prepare the salsa by mixing tomato paste, chopped onions,  green chilies, coriander leaves, salt, black pepper powder, lemon juice, and olive oil in a bowl and letting it sit for 30 minutes. 

For the yogurt sauce, mix yogurt, water, green chutney, salt, and sugar in a bowl and let it sit for 10 minutes. Heat the tortillas either on direct heat or on a hot skillet for about 3 minutes per side. To assemble the tacos, place the warm tortillas on a plate and add the chicken. Add a spoonful of salsa and drizzle with a teaspoon of yogurt sauce.
